INGREDIENTS⁠
1 cup butter room temperature⁠
2 cup sugar divided⁠
1 cup milk room temperature⁠
1 teaspoon vanilla⁠
3 cups flour⁠
2 teaspoon baking powder⁠
8 egg whites room temperature⁠
¼ teaspoon salt⁠
½ cup rainbow sprinkles the long skinny jimmies work better than round balls⁠
Frosting⁠
1 ½ cup unsalted butter room temperature⁠
4 ounces cream cheese room temperature⁠
2 pounds powdered sugar⁠
2-4 tablespoon heavy cream⁠
2 teaspoon vanilla⁠
Pinch of salt⁠


INSTRUCTIONS⁠
For the Cake⁠:
To start, preheat oven to 350 degrees F.⁠
Grease 3, 8-inch cake pans and line the bottom with parchment paper. This helps the cake to not stick in the pan and is worth the extra effort.⁠

Beat egg whites and ½ cup sugar with a stand mixer or a hand mixer until it forms a stiff peak. Set aside.⁠
In a large bowl cream together the butter, 1 ½ cup sugar and vanilla.⁠

In a separate bowl combine flour, baking powder, and salt⁠
Add flour mixture alternating with the milk to the butter mixture until a smooth batter forms.⁠
Fold in egg whites and rainbow sprinkles.⁠

Divide into prepared pans and smooth the top of the batter with a spatula.⁠ Bake 25-30 minutes or until the cake springs back lightly when touched.⁠ Cool completely before adding the frosting.⁠

For the Frosting⁠:
Cream together butter and cream cheese until very smooth and fluffy, about 3 minutes.⁠

Add powder sugar and mix until fully combined.⁠
Add heavy cream vanilla and salt and beat to combine.⁠
If it seems too stiff add more cream, a teaspoon at a time, until it creates a smooth icing.⁠
Decorate with Sixlet candies and more rainbow sprinkles.⁠
