INGREDIENTS
1 cup butter room temperature
2 cup sugar divided
1 cup milk room temperature
1 teaspoon vanilla
3 cups flour
2 teaspoon baking powder
8 egg whites room temperature
¼ teaspoon salt
½ cup rainbow sprinkles the long skinny jimmies work better than round balls
Frosting
1 ½ cup unsalted butter room temperature
4 ounces cream cheese room temperature
2 pounds powdered sugar
2-4 tablespoon heavy cream
2 teaspoon vanilla
Pinch of salt
INSTRUCTIONS
For the Cake:
To start, preheat oven to 350 degrees F.
Grease 3, 8-inch cake pans and line the bottom with parchment paper. This helps the cake to not stick in the pan and is worth the extra effort.
Beat egg whites and ½ cup sugar with a stand mixer or a hand mixer until it forms a stiff peak. Set aside.
In a large bowl cream together the butter, 1 ½ cup sugar and vanilla.
In a separate bowl combine flour, baking powder, and salt
Add flour mixture alternating with the milk to the butter mixture until a smooth batter forms.
Fold in egg whites and rainbow sprinkles.
Divide into prepared pans and smooth the top of the batter with a spatula. Bake 25-30 minutes or until the cake springs back lightly when touched. Cool completely before adding the frosting.
For the Frosting:
Cream together butter and cream cheese until very smooth and fluffy, about 3 minutes.
Add powder sugar and mix until fully combined.
Add heavy cream vanilla and salt and beat to combine.
If it seems too stiff add more cream, a teaspoon at a time, until it creates a smooth icing.
Decorate with Sixlet candies and more rainbow sprinkles.
