INGREDIENTS:
1 3/4 lbs grape tomatoes or cherry tomatoes, halved (I like a blend of multi-color if you can find them)
1 (8 oz) pkg. fresh mozzarella pearls * can sub with vegan feta
Dressing:
1/4 cup extra virgin olive oil
3 Tbsp red wine vinegar
1 tsp minced garlic
1 tsp honey *can sub with maple syrup
1/4 cup chopped fresh parsley
2 Tbsp chopped fresh basil
1/2 tsp dried oregano
Salt and freshly ground black pepper
INSTRUCTIONS:
1.For the dressing: In a mixing bowl whisk together olive oil, red wine vinegar, garlic, honey, parsley, basil, oregano and season with salt and pepper to taste.
2.In a medium salad bowl toss together tomatoes with dressing. Add mozzarella and toss.
3.To allow flavors to infuse further let marinate for 30 minutes in the refrigerator, tossing once halfway through.
4.Serve within a few hours of preparing.
