TURMERIC TOFU NOURISH BOWL

 


INGREDIENTS :

4 oz extra firm tofu, cubed

1 tsp fresh or ground turmeric

3 C spinach, steamed

1/2 C cherry tomatoes, halved

1/2 avocado, sliced

1 tsp everything bagel seasoning

Squeeze of lemon or lime

1 tbsp tahini + 1 tsp sriracha


INSTRUCTIONS :

1. Place tofu cubes in a steamer basket in a saucepan with 1” of water and turmeric. Steam for 4-5 minutes. (Alternatively you can pan fry or bake your tofu).

2. Set tofu aside and steam your spinach for 2 minutes in the same saucepan.


3. Add tofu and spinach to a bowl and top with avocado, tomato, seasoning, and citrus. Top with a drizzle of sriracha tahini if desired.
