Sweet Potato Taco Salad

 


INGREDIENTS :

kale, chopped and massaged with lime juice + EVOO

cilantro, chopped

cherry tomatoes, halved

black beans, warmed and mixed with cumin + salt + garlic powder

sweet potato, cubed and tossed with EVOO + salt, chili powder, cumin, garlic, oregano, and paprika

jalapeño, sliced

avocado, sliced

Cilantro Lime Crema:

2 TBSP plain coconut yogurt

1/2 lime, zested + juiced

1/2 jalapeño

1/2 bunch cilantro

1 green onion

1/2 tsp agave

pinch of salt

Optional Toppings:

salsa

chips

hot sauce

vegan cheese


INSTRUCTIONS :

1. Spread sweet potatoes on a parchment lined baking sheet. Roast in 425 degree oven for 25-30 minutes.

2. Add all ingredients for Crema to a and purée until creamy. Season to taste.


3. Add all ingredients for salad to a bowl. Top with roasted sweet potatoes, cilantro crema, and additional optional toppings.
