Stone Fruit + Melon Summer Salad

 


INGREDIENTS:

2 cups ripe watermelon, chopped

4 ripe apricots, pits removed

1 cup cherries, pits removed

3 peaches, pit removed

1 cup honeydew or cantaloupe, chopped

4 plums, pit removed

3 Tbsps freshly squeezed lemon juice

2 Tbsps raw honey

zest from 1 or 2 fresh lemons

fresh mint leaves


INSTRUCTIONS:

1.Chop the fruit into smaller pieces so that everything is similar in size.

2.Place all fruit in a bowl.

3.In a small mixing bowl or jar, whisk together lemon juice, honey, and zest. Drizzle over your fruit and toss gently to coat.


4.Serve immediately or refrigerate for 1 hour to cool.

5.Add mint leaves if desired.
