INGREDIENTS :
Grapefruit Avocado Salad:
4 cups lettuce, chopped
1 cup canned chickpeas, rinsed and drained
1 firm avocado, sliced
1 grapefruit, sectioned
2 tbsp quick pickled onions
2 tbsp sliced almonds
1 tbsp fresh mint, finely chopped
Creamy Lemon Chia Dressing:
1 lemon, zested
1/4 cup lemon juice
1 tsp Dijon mustard
1 tbsp maple syrup
2 tbsp olive oil
1 tbsp chia seeds
Salt and pepper, to taste
INSTRUCTIONS :
1. Add all ingredients for salad to a bowl.
2. Add ingredients for dressing to a jar and whisk or shake vigorously to combine. Season to taste.
3. Pour dressing over salad right before serving and toss to combine.
