Cucumber Shrimp Salad with Lemon and Herbs

    INGREDIENTS:

    2 cups cooked shrimp, chopped

    2 cups diced cucumber, English or Persian cucumbers preferred

    1 cup diced red bell pepper

    1 jalapeño, seeds removed and minced

    2 tablespoons chopped flat leaf parsley

    1 tablespoon chopped fresh mint

    2 tablespoons fresh lemon juice

    1 tablespoon olive oil

    Kosher salt and fresh ground black pepper to taste


    INSTRUCTIONS:

    1.Add all of the ingredients to a serving bowl, stir together until combined and coated in the lemon juice and olive oil. 


    2.Taste for seasoning and serve.
