Lemon Muffin

 


INGREDIENTS:

- 300 g Flour

- 250 ml Milk

- 100 g powdered sugar

- 75 g Butter

- 2 Eggs

- 1 Lemon untreated

- 1 sachet Yeast

- 2 tsp. Coffee Poppy seeds

- 1 pinch Salt


PREPARATION:

Preheat the oven to 180 °C.

Cut the butter into strips and melt it in a small pan.


Wash the lemon and grate the zest.

Break the eggs into a bowl and mix with the sugar and lemon peel. Whisk until the mixture turns white.


Add the butter and milk and mix again.

Mix together the flour, baking powder and salt and add this mixture to the previous one until you get a smooth dough.


Pour 2/3 of the mixture into buttered muffin cups and sprinkle with poppy seeds.


Place in the oven and bake for about 30 minutes.
