A delicious, fiber-packed side dish. Made with four types of beans and a homemade vinegar and mustard dressing.
INGREDIENTS:
1 398 ml can green beans, drained
1 540ml can red kidney beans, drained and rinsed
1 398ml can wax beans, drained
1 540ml can broad beans, drained
1 onion, thinly sliced
1 green pepper, thinly sliced
1/4 cup sugar
1/2 cup white vinegar
1/2 tsp dried basil
1/2 cup vegetable oil
1 tsp salt
1/2 tsp dried mustard
2 tbsp parsley, chopped finely
pepper, to taste
INSTRUCTIONS:
1.Add green beans, kidney beans, wax beans, broad beans, onions and green pepper to a large bowl. Stir to combine.
2.In a small bowl, whisk together sugar, white vinegar, pepper, basil, vegetable oil, salt, dried mustard and parsley. Pour over salad and toss to combine.
3.Let marinate a few hours before serving.
