Hoisin Beef Noodles

        
Hoisin Beef Noodles



Serves 4:

To marinade the beef:
500g lean steak strips
1 tbsp light soy sauce
1 level tbsp cornflour
1/4 tsp bicarbonate of soda
Black pepper

For the stir fry:
Spray veg oil
2 peppers, sliced
1 red onion, sliced
1 punnet mushrooms, sliced
Small bunch spring onions, sliced
Dried egg or wholewheat noodles

For the sauce:
2 tbsp hoisin sauce
2 tbsp light soy sauce
2 tbsp dark soy sauce
2 tbsp oyster sauce
3 tbsp rice vinegar
1 tsp sugar or sweetener
1 tsp onion granules
1 level tbsp cornflour
75-100m! boiling water (plus extra if needed)



Method:

Add the beef into a medium bowl. Add the marinade ingredients and mix well. Set aside for 15 minutes while you prepare the veg.

In another medium bowl add all the sauce ingredients.
Mix well and set aside (don't worry if it's a little lumpy, it
won't matter!).

Spray a large non-stick pan with oil and cook the beef
over a high heat.

Add the steak strips to the pan in a single layer I usually do this in two batches. Cook for about 1-2 minutes on each side until browned. Remove from the pan, cover with foil to keep it warm and set aside for now.

Spray a little more oil into the pan and reduce to a medium-high heat. Then add the red onion and cook for 2 minutes before adding the rest of the veg and cooking for about 5 minutes until softened. Add the cooked beef back into the pan. If it starts to stick, add a splash of boiling water.

Boil the noodles as per the packet instructions.

Pour in the stir fry sauce and combine. If it is too thick add another splash of boiling water. Reduce the heat and simmer for a few minutes. Then add the cooked noodles and coat in the sauce. Enjoy!
