STICKY SOY CHICKEN

STICKY SOY CHICKEN



This is legit one of my favourite dinners! I am trying to reduce my sugar intake atm, but I did have a tbsp of honey in my dinner.

For two portions:

- 300g of chicken thigh fillets (all fat removed)
- 1tbsp of cornflour
- tbsp garlic and onion granules
- 2-3 garlic cloves
- Spring onions
- 1 sliced red chilli

Coat the chicken in the cornflour, garlic granules and onion granules then fry this in some low calorie cooking spray on a nice high heat don’t move the chicken around to much as you want it to get nice and crispy.

Then add in the garlic, chillis and spring onions and give this a good stir for 30 seconds.





For the sauce:

- 2tbsp honey
- 2tbsp balsamic vinegar
- 3tbsp soy sauce
- 1tbsp tomato purée

Once the chicken is cooked, mix all the sauce ingredients together and pour this over the chicken and just cook until it’s reduced down and the sauce is nice and sticky.

I served mine with broccoli sprinkled with chilli, garlic and soy.

Egg fried rice:

- 120g dry rice (I used brown)
- 50g frozen peas
- Splash soy sauce
- 1 egg whisked

I boil the rice, then let this drain off and leave to one side. Once the steam has gone and it’s cooled off, I add to a frying pan with the peas, create a hole in the middle add in the whisked egg once the egg has cooked a bit add  splash of soy sauce and mix it until the egg and soy sauce has coated the rice.
