Hoisin Chicken With Egg Fried Rice



Nice easy dinner today , exactly the same as my teriyaki chicken I made the other week but with hoisin sauce instead of teriyaki!

For the chicken:

- 400g diced chicken breast/ thighs
- 2tbsp cornflour
- Tsp garlic pepper
- Tsp onion powder
- Tsp hot paprika
- 2-3 crushed garlic cloves.

You want the chicken to be dry, so use some kitchen roll to get rid of an excess moisture from the chicken. Then just toss this in the cornflour and spices.

Get a frying pan nice and hot with lots of low cal cooking spray, once the pan is hot add the chicken and make sure it’s not over crowded and try not to move the chicken too much.

Leave it a good 2-3 minutes to cook on each side, so that it goes nice and crispy.

Once the chicken is almost cooked, reduce the heat of the pan, add in the onion and garlic stir fry until the onion is soft.

For the sauce:

- 2tbsp hoisin sauce
- 2tbsp agave syrup/ honey
- 3tbp soy sauce
- Pinch chilli flakes
- Tsp cornflour mixed with water
Mix all ingredients together in a bowl.

When the chicken is cooked set to one side and then add the sauce ingredients to the pan.

Once the sauce reduces slightly looks sticky, reduce the heat of the pan and just leave to simmer.

Egg fried rice:

- 120g dry rice
- 50g frozen peas
- Splash soy sauce
- 1 egg whisked

I boil the rice, then let this drain off and leave to one side (you can prep this ahead of time and just fry the rice off when ready).

Once the steam has gone and it’s cooled off, I add to a frying pan, create a hole in the middle spray lots of low calorie cooking spray, add in the whisked egg once the egg has cooked a bit add splash of soy sauce and mix it until the egg and soy sauce has coated the rice!!
