Ingredients:
250g Pasta of choice1 Medium onion chopped
½ Punnet mushrooms (about 12 medium ones)
½ Medium sized green pepper(chopped)
2 Chicken fillets (cut in to small cubes)
1 Teaspoon ground garlic
Salt and pepper to taste
1 Teaspoon red chilli powder
1 Teaspoon paprika
½ Teaspoon dry oregano
¾ can tomato puree
2 Tablespoons sour cream
Handful freshly chopped basil
Mixture of cheeses
Cheddar
Mozzarella
Parmesan
Method:
Heat oil and sauté onions till soft add in ground garlic. Sauté for a minute then add the chicken with the spices let it cook till tender. Add in the chopped mushrooms and green pepper.Cook till the mushrooms are soft. Add in tomato puree and sour cream. Mix and add the boiled pasta along with freshly chopped basil.
Take an oven safe tray or Pyrex. Add half of the pasta. Top with a layer of the mixed cheeses. Add the remaining pasta over the cheese layer. Top with more cheese.
Finish with a sprinkle of dry oregano and dry parsley. Bake till heated through and the cheese is melted. Serve hot with fresh basil.
