Sausage & Potato Casserole



My live student cook along received such positive feedback last week, I thought it would be useful to share a few other simple, budget friendly recipes.

Sausages are such a brilliant option if you are watching what you spend. Not only budget friendly, they are extremely versatile too.

Delicious in pasta sauces, squeezed into a ragu, traybakes and comforting casseroles.

This recipe is lovely and most definitely not just for students.

Serves4⠀⠀⠀⠀⠀⠀
INGREDIENTS
8 Sausages
1 tin of tomatoes or passata
3 small onions - chopped ⠀
3 cloves of garlic - crushed ⠀
1 red pepper - chopped ⠀
200g new potatoes - halved or quartered
Salt/pepper/olive oil⠀
2 teaspoons smoked paprika
2 handfuls fresh spinach

METHOD

Start by browning the sausages, then set aside. Sauté the onions until golden for a rich flavour.

Add the garlic, red pepper, potatoes and paprika. Return the sausages to the pan. Pour in the tomatoes/passata, season, lid on and simmer for 1.5 hours mins on a low heat.

Sausage & Hasselback Traybake

Serves 4 ⠀⠀⠀⠀⠀⠀⠀⠀⠀
INGREDIENTS ⠀
8-10 Sausages
2 red peppers cut into chunks ⠀
2 red onions sliced into wedges⠀
10 small new potatoes
1-2 tablespoons Balsamic Vinegar ⠀
Basil leaves to finish (optional)⠀
A large roasting tin ⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat the oven to 210 degrees Celsius (conventional) 190 degrees Celsius (fan)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Start by slicing the potatoes roughly 1-2 mm apart, not going all the way through, drizzle the potatoes with olive oil and seasoning them with salt and pepper.

Cook for 30 minutes.
