This healthy baked chicken breast recipe will always be one of our all-time favorites. Chicken breast is a simple and versatile ingredient that everyone loves. However, it can be tricky to work with as it can become dry and bland easily.

This oven baked chicken is healthy and simple. It takes no time to be prepared. It is coated with flavorful seasoning mixture, cooked to tender and moist perfection paired with side vegetables.

Ingredients
•Chicken breast 900 g 7 piece alyoum
•Olive oil 2 tbsp
•Salt to taste
•Garlic powder 1 tbsp
•Onion powder 1 tsp
•Black pepper powder 1 tsp
•Paprika powder 1 tsp
•Red chili flakes 1/2 tsp
•Cumin powder 1/2 tsp
•Oregano 1 tsp
•Italian seasoning 1/2 tsp
•Veggies : Carrots, Cherry tomatoes, Onion,  Zucchini, Potato, Capsicum, lemon slices.




Method
Flat the chicken breast to the equal thickness by hammering.

First brine the chicken: In luke warm water add 1/4 tsp of salt and leave the chicken breast in it for 1/2 hour.

Now pat dry the chicken breast with kitchen paper towel.

Place the parchment paper on your baking try and preheat the oven to 180 degrees C or 350 degrees F.

Rub the olive oil on both sides of the chicken.

Mix all the spices together and rub seasoning on both sides of the chicken.

Bake the chicken for 20 mins until tender.

▪️In a thick non stick pan pour 1 tbsp olive oil , all veggies, add pinch of salt and pepper and sauté. Low the flame and cover the lid. Stir after 5 mins keep checking and stirring until all the veggies gets soft.

Pour the veggies on top of baked chicken.
