Decadent caremelized mango  flan

I love flans and u can see all kinds of flan on my feed including choco flan but today I’m sharing the recipe of mango flan made with mangoes ! It’s super simple and tastes delicious hope u try it as well.

- Condensed milk 1 tin 375 gms
- Evaporated milk 180 ml
- Vanilla essence 2 teaspoon
- Eggs 4
- 1 extra large mango sliced (I have used Alfonso)

For caramel
Stir together the 2/3 cup sugar and 1/4 cup water in saucepan until the sugar is completely moistened .

Bring to boil over medium heat and cook, without stirring, until the mixture begins to turn golden
Continue stirring until it’s honey colored  Remove from the heat and swirl in pan for few seconds



Method
- Preheat the oven 180 Celsius for 15 min.

- Grease the  pan generously with butter.

- Pour the  caramel in the pan and spread all around.

- In a blender , blend eggs , condensed milk , evaporated milk , vanilla and mango all together.

- Pour this flan mixture and cover with aluminum foil and bake it 150 Celsius for 1 hour over water bath until it’s firm from top but still jiggly.

- Check with knife inserted in the middle comes out clean.

- Remove from the oven and let it cool for minimum two hours at room temperature.

- Refrigerate for minimum 6 hours or better overnight.

- Clear the edges with the help of knife and remove from the pan and serve with berries and mango cubes
