Bitter gourd is an important vegetable crop which has a unique bitter taste.
It has many health benefits, you can cook it in combination with any meat with some tips that enhance it’s taste and make it more flavorful.

Ingredients
•Bitter gourd 0.75 kg
•Mince 1/2 kg
•Ginger garlic paste 1 tbsp
•Onion 1 large
•Fried onion 1 medium
•Bay leaf 1
•Cumin seeds 1 tbsp
•Tomato 2 medium
•Red chili powder 1 1/2 tsp
•Turmeric powder 1/4 tsp
•Coriander powder 1 tsp
•Yogurt 5 tbsp
•Green chilies 5
•Lemon juice 3 tbsp
•Whole spice powder(Garam masala) 1/4 tsp
Method
▪️Peel then cut the bitter gourd horizontally into half. Remove all the seeds. Now cut thick horizontal slices. You can check the slices thickness in highlights in desi food section.
▪️Mix 1 tbsp of salt in bitter gourd, cover and refrigerate over night.
▪️Next morning wash them gently, clean all the salt and keep them on strainer. Let them dry completely.
▪️Heat the oil and fry the bitter gourd until crisp and golden brown. Fry the onion in the same oil. Keep the fried bitter gourd and onions in aside.
▪️In the same oil add sliced onion sauté until onions get good golden color. Add ginger garlic paste, bay leaf and cumin seeds. Sauté on medium to high speed until mince water is all dried.
▪️Now add all the spice powders mentioned above and cubed tomatoes. Mix everything well add 1/2 cup of water and cover the lid. Keep the flame medium to low so the mince will be cooked and tomatoes will get soft.
▪️Once tomatoes are all soft and water is all dried, add the fried bitter gourd and beaten yogurt. Let it cook on high flame. When the oil separates from mince add the fried onion, green chilies, lemon juice and garam masala.
▪️Cover the lid and let everything cook for 10,15 mins on low flame.
▪️Top with coriander leaves and serve with naan.
