PARMESAN-CRUSTED CHICKEN

Ingredients:

  • 1 medium whole chicken (about 1kg)
  • 3Tbsp (45ml) olive oil
  • 2 large lemons, juice freshly squeezed
  • 45g weber lemon & herb chicken marinade
  • 1Tbsp garlic salt
  • 1Tbsp paprika
  • Salt and pepper, to taste
  • 50g parmesan cheese, grated




Method:

In a small bowl mix together olive oil, lemon juice, garlic salt, paprika and lemon & herb marinade. Mix well until it becomes a paste.

Wash the chicken. Pat-dry the chicken using a paper towel. Season with salt and pepper. Coat the chicken with the paste mixture. Transfer into a large bowl, cover with cling wrap and let it rest for 2-3hours.

Put the chicken in your Duo Crisp inner pot and add one cup chicken stock.  Secure the pressure cook lid and set to high for 20 minutes. When the 20 minutes is up, allow a natural release.

Remove the chicken and clean the inner pot. Add in the stainless steel trivet and place the chicken on top of it, close the air fryer lid. Air fry for 15 minutes at 180°C. After 15 minutes increase the temperature to 200°C, sprinkle parmesan on the chicken and continue to air fry for 5 minutes (the chicken will be golden brown with parmesan crisp on the outside).

Place the chicken on a chopping board and let it rest for 5 – 10 minutes before cutting and serving.
