INGREDIENTS:
• 4 thighs and 4 drumsticks chicken
• 2 cups soaked rice in warm water for 35 minutes
• Oil 2 tbsp
• Onion( 1medium)
• Garlic (2 chopped cloves)
• Mushrooms (2 cups)
• Paprika (2tbsp)
• Rosemary (1 tbsp)
• Thyme(2tbsp)
• Seven colours grill seasoning (2 tbsp)
• Pepperdews (handful)
• Chopped tomatoes tin(410g)
• Stock(2 cups)
• Salt and pepper (as needed)
METHOD:
✅ Coat chicken with salt ,pepper and paprika.
✅ Oil in a pan and brown the chicken until brown on both sides and set aside.
✅ In a same pan,add onion, garlic, paprika, cumin, rosemary,thyme and seven colours grill seasoning and saute till soft.
✅ Add chopped mushrooms and cook about 2 minutes.
✅ Add tomatoes and cook for 2 minutes and add stock.
✅ Add soaked rice and pepperdews and adjust seasonings with salt and pepper if necessary.
✅ Add back the chicken,cover the pan or casserole and cook in a preheated oven at 180 degrees for 40 minutes.
✅ Open the lid or foil and cook for further 5 minutes
