INGREDIENTS:• 2 chickens cut into
• 1/4s so you have 8 pieces,
• score chicken by giving it 1 or 2 slashes on each piece with sharp knife,
• wash drain well In large bowl
• add following:
• 4Tbs olive oil,
• 1/2cup lemon juice, zest of one lemon,
• 1Tbs freshly minced garlic,
• 1/2tsp freshly ground black pepper,
• 1/4tsp mixed herbs, salt to taste, minced green chillies to taste,
• 1tsp chilli flakes,
• 1/4tsp dried parsley,
• 1/2tsp turmeric,
• 1 cup Nando’s lemon & herb marinade,
• 1Tbs Worcestershire sauce,
• 2Tbs honey,
METHOD:
mix well add in chickens coat it well,marinate few hours best overnight
Pour some oil in frypan let excess marinade drip off from chicken into dish & fry chicken pieces on medium high heat 4 to 5 minutes on each side, transfer to ovenproof dish cover with foil bake in preheated oven @ 170° deg 25min or till piping hot cooked through
For sauce you will have leftover marinade in dish from chicken pour into little saucepan, add in 10g butter bring it to gentle simmer for a minute, drizzle over chicken pieces
turn on grill put chicken under grill few minutes till it browns a bit, serve with chips & coleslaw salad..
