INGREDIENTS:
• 4 chicken drumsticks and 4 thighs
• 30 ml flour for distung
• 2 tbsp olive oil
• 1 garlic cloves(chopped)
• Weber rosemary and garlic seasoning
• 1 tbsp paprika
• 2 tbsp extra special curry
• 410g chopped tomatoes
• 2 tbsp thyme
• 4 bay leaves
• 400 ml chicken stock
• 2 tbsp amapelepele BBQ spice
METHOD:
-Dust chicken pieces with flour.
-On the stove,heat oil and fry chicken both sides until golden brown and set aside.
-In the same add a dash of oil ,add,onion,garlic and cook until soft.
-Season onion with Weber rosemary and garlic aromatic, add paprika,extra special curry and stir.
- Pour chopped tomatoes,thyme and stir gently.
- Take chicken back into the pot,add stock,add Bay leaves, close the pot and simmer for 20 minutes.
-Add Amapelepele BBQ spice
- Adjust seasoning with salt and pepper.
For: Sticky lamb chops
INGREDIENTS
• 1kg lamb chops
• 80 ml Mrs balls
• 80 ml honey
• 80 ml sweet chilli sauce
• 80 ml lemon juice
• 15 ml coriander
• 15ml steak and chops spice
• 2 garlic cloves (minced)
• 500ml mutton stock
Method
Boil lamb chops in mutton stock for 20 to 30 minutes and put aside
In a separate pan cook:
Mrs balls,honey,sweet chilli sauce, coriander,steak and chops spice,lemon juice,and garlic until thick on low heat.
Once lamb chops are done add into the sauce and simmer for few minutes.
Tip: If ur marinade is too thick pour in a little stock from chops.
