Chicken Dish

This dish is simple, requires little attention, and has minimal ingredients. Improvised, and added my own "Valentines" flair by adding rose petals. (Also I hate extra dishes so use your hands as the measuring cups )


INGREDIENTS:
•6 bone-in, skin-on chicken thighs
•sea salt
•1 cup uncooked couscous
•1/2 cup chopped shallots
•2 large handfuls chopped Castelvetrano olives
•1large handful chopped dried dates
•1 tsp cumin
•1/4 tsp cinnamon
• 3 handfuls finely chopped cilantro
•seeds from 1/2 a pomegranate
•dried rose petals





METHOD:
Preheat oven to 425°F with the rack about 8" from heat.

Sprinkle the chicken skin with salt and place skin-side-down in an oven proof skillet over medium on the stovetop.

Don't touch the chicken for 12min. Allow the chicken to release easily from the pan (don't force it.12-15min of cook time!). The skin should be golden brown.

Remove the chicken and place skin-side up on a plate. Discard the drippings.

Add the couscous, shallots, olives, dates, and spices with 2 pinches of sea salt. Stir in 1 and 1/3 cups of water.

Bring to a simmer. Add the chicken back in, and cover the skillet with foil. Bake for 15-20min until cooked through.

Remove the foil, broil the chicken for 2-5min until golden, crispy. Top with cilantro, pom seeds, and rose petals.
