INGREDIENTS:
- 410g chickpeas (drained)
- 410g red kidney beans (drained)
- 410g butter beans
- 410g baked beans
- Robbot peppers half of each
- ½ cup chopped baby marrows
- ½ cup sliced carrots
- 1 medium onion
- Fresh green beans (blanched)
- 1 tbsp spices of your choice
- 1 tsp garlic minced
- 1/4 cup tomato sauce
- 1/4 cup chutney or sweet chilli sauce
- 1 tsp oil
- Salt and pepper to taste
METHOD
- Fry onion, garlic until soft...Add carrots, peppers, spices, green beans, baby marrows stirring occasionally, and cook for 2 to 3 minutes then add red kidney beans, butter beans, chick peas, baked beans, season with salt and pepper and cook for 3 minutes
- Remove from heat and add sweet chilli sauce or chutney with tomato sauce.
For Prawn fried rice
INGREDIENTS:
- 400g prawns
- 1 tbsp oil
- 1 tsp butter
- 1 tbsp crushed garlic
- 2 tbsp soy sauce
- 2 cups cooked golden delight rice
- 1 cup red, yellow and green peppers
- 1 tsp seafood spice
- 1 tsp cajun spice
- 1tsp mixed herbs
- ½ cup baby marrow
- 1 cup mushrooms
- Salt and pepper
METHOD:
- Preheat a large pan/wok to medium heat
- Season prawns with seafood spice, Cajun spice
- Add oil, garlic, prawns to the pan and fry for 3-4 minutes or until golden brown
- In another pan add oil, fry bacon, onions, peppers, mushrooms, paprika, mixed herbs, turmeric powder, cook for 2 minutes, add chopped parsley, baby marrows. Add cooked rice and prawns.
- Pour the soy sauce, stir and mix everything together. Season with salt and pepper if desired.
