Pecan chocolate loaf with cream cheese frosting

  • This Chocolate loaf combines the indulgence of a rich chocolate sponge along with the classic pecans & cream cheese frosting.

  • You can completely skip the pecans & cream cheese frosting & enjoy your plain chocolate loaf. 


INGREDIENTS:

▪️1&1/4cup all purpose flour

▪️1&1/2cup granulated sugar

▪️2/3cup unsweetened cocoa powder 

▪️1/2 cup butter (room temp)

▪️2tsp vanilla 

▪️3 large eggs (room temp)

▪️3/4 cup milk (room temp)

▪️3/4 tsp salt

▪️1 tsp baking soda 

▪️1/4 tsp baking powder 

▪️1/4 cup chopped pecans (optional)




METHOD:

  1. Preheat the oven 180c for 15min. 


  1. Greese a loaf pan & dust with COCOA POWDER & keep aside. 


  1. In a bowl sift all the dry ingredients ,mix and keep aside. 


  1. In another bowl add eggs,sugar,butter, vanilla & whisk for 2-3 min until well combined. 


  1. Add eggs ,one at a time & whisk well. 


  1. Now add half sifted dry ingredients & half milk,whisk.Add remaining dry mixture & milk,mix well (don't overmix). 


  1. Add chopped pecans (optional). 


  1. pour the batter into the prepared loaf pan & bake at 180c for 40-45min or until toothpick inserted in the middle comes out clean. 


  1. after 5-10 min carefully remove lpaf from pan & cool completely. 


Cream cheese frosting:

  1. In a bowl take 1cup cream cheese ( room temp)& 5tbsp butter (room temp)whisk well. 


  1. Add 3/4cup powdered sugar ,1tsp vanilla & mix well. 


  1. Add 5-6tbsp milk(u can add more to adjust the consistency),mix well until completely smooth. 


  1. Spread the Frosting on cooled chocolate loaf,dust cocoa or cinnamon powder on top & enjoy.
