PAP & BOEREWORS

INGREDIENTS

  • 500g boerwors
  • FOR THE PAP
  • 4 cups hot water
  • 1 cup cold water
  • 3 cups mealie meal 


FOR THE TOMATO SMOORTJIE:

  • 1 large onion, finely chopped
  • 2 tbsp cooking oil
  • 1 tsp curry powder
  • 4 large tomatoes, finely chopped
  • ½ tsp sugar
  • salt and freshly ground pepper to taste





METHOD

for the boerewors:

  1. In a heated pan, fry your boerewors for 3 min on each side. 


  1. If your wors seems to be burning to the surface of the pan, add a little water and give the pan a shake. 


  1. Serve with pap en sous. 


for the pap:

  1. In a medium saucepan add hot water and bring to a boil. 


  1. In a separate bowl, mix  one cup of mealie meal and one cup of cold water until it forms a soft lump-free paste. 


  1. Add the mixture to the boiling water and stir till the mixture becomes thick. 


  1. Reduce the heat and simmer for about 5- 7 minutes. 


  1. Add the rest of the mealie meal (a little at a time), stirring and beating with a wooden spoon until all mixed. 


  1. Cover and simmer for 5 minutes, stir again and then cook for another 5 minutes or until cooked. 


  1. Allow to cool slightly before serving. 


  1. for the tomato & onion smoortjie:
  2. Sauté onions in the oil until lightly brown, add the curry powder. 


  1. Add the rest of the ingredients. Cook over a medium heat for about 5 minutes stir from time to time. 


  1. Serve hot over boerewors and pap.
