INGREDIENTS:
▪️3large eggs (room temp)
▪️2cups sugar
▪️3/4cup melted butter(room temp)
▪️1/3 cup oil
▪️2tsp vanilla
▪️1cups buttermilk (room temp)
▪️3cups all purpose flour
▪️1tsp baking powder
▪️1/2tsp baking soda
▪️1/2tsp salt
▪️1Tbsp lemon zest for cake
▪️2cups fresh berries
✔️For glaze
▪️1&1/4cup melted white chocolate+1tsp lemon zest +2-3tbsp heavy cream.
METHOD:
- Preheat the oven at 180c for 15min.
- Generously butter & flour a bundt pan, tapping out excess flour and keep in the refrigerator for 15min.
- In a bowl add eggs,sugar & vanilla & whisk until light & pale in colour (3-4 min).
- add butter,oil & buttermilk and mix again.
- In a separate bowl add dry ingredients flour, Baking powder, baking soda,salt & mix.
- add this dry ingredient mixture into the wet ingredients & mix for 1min untu well combined.
- add lemon zest & fresh berries & mix well with a spatula.
- pour the batter into the prepared bundt pan & bake at 180c for 50-60min or until the toothpick inserted in the centre comes out clean.
- take out from the oven & let it cool for 15min.
- using a cake stick losen the sides of cake & then invert onto a wire rack & coll completely.
- For Glaze melt white chocolate in a bowl & cool completely. add heavy cream (room temp) & lemon zest .
- whisk until well combined. you should have a thick pourable consistency.
- pour carefully on the cake as desired & top with fresh berries.
