GOLDEN SYRUP CAKE

GOLDEN SYRUP CAKE

INGREDIENTS:

For the cake:

50 g butter or margarine 

75 ml hot water 

120 g cake wheat flour (250 ml)

1 tsp Royal Baking powder (5 ml)

pinch of salt 

2 large eggs 

100 g white sugar (125 ml)

1 tsp vanilla essence (5 ml) 


For the Syrup:

100 g butter or margarine 

100 ml golden syrup or honey 







METHOD:

For the cake 

1. Preheat the oven to 190°C. 


2. In a medium pan, add the butter or margarine and water, heat until boiling point, remove from the heat and set aside. 


3. In a medium bowl, sift the cake flour, Royal baking powder and salt together. 


4. In a medium bowl, add the eggs and beat using a n electric hand beater or whisk until the eggs are light and foamy. Add in the sugar and beat gradually until the sugar is dissolved then add the vanilla essence. 


5. Stir in the sifted dry Ingredients into the egg mixture. 


6. Add the melted butter or margarine mixture and beat for one minute. 


7. Pour into the prepared cake tin and bake at 190 °C for 20 to 25 minutes.

8. Meanwhile melt the butter and the syrup (Do not allow the mixture to boil). 


9. Pour the hot syrup mixture over the cake immediately when it comes out of the oven. Loosen slightly around the sides, and lift the cake here and there to allow the syrup to run in underneath. 


10. Serve hot with tea os as a dessert with ice cream or readymade custard.
