INGREDIENTS:
- Plantains (I used 10. depends the size of your dish)
- Eggs ( I used 4. depends the size of your dish)
- Baking Soda 1/2 teaspoon
- Parsley
- Mozzarella
- Mild Cheddar Cheese
- Crushed chilli flakes
- Crushed garlic
- Powdered Ginger
- Aromat
- Maggi liquid seasoning
- Soya sauce
- Spring onions
- Italian herbs
- Minced Beef & Steak ( you can use minced turkey)
- Parsley
- Chopped Red/ Yellow/Green bell pepper
- Chopped Onions
- Chopped Spring Onions
- Blended chopped tomatoes
METHOD:
1- Slice each plantain in half down the length. Separate the 2 halves and flip them onto their flat sides to create a stable base. Slice the 2 halves again into very thin slices. Once they’ve all been cut, fry them.
2- Cook the minced beef with onions
3- Once cooked add garlic, spring onions, maggi liquid seasoning, soya sauce and all the seasonings.
4- Pour in blended chopped tomatoes and stir until slightly thickened/ sauce is bubbling
5- Add red bell peppers and stir until cooked .
6- Cover the bottom of the dish with a single layer of the fried plantain strips. Spoon a layer of the ground beef mixture onto the plantains. Top with cheese. Repeat with another layer of plantains, meat, and cheese ( this can be repeated again depending size of dish) .Top with a final layer of plantains.
7- Whisk together the eggs and baking soda until frothy and pour on top of plantain layer.
8- Top with cheese and garnish parsley and chilli flakes and then bake for 25min.
9- Allow it to cool before serving.
