Tomato chutney 

  • Jeera seeds
  • 1 onion finely cubed 
  • +-1 tomato 
  • 2 Green chillies 
  • 1 tsp kashmiri powder 
  • 1/2 tsp cumin powder
  • 1 tblspn tomato paste 
  • 1 tsp garlic 
  • Salt to taste 


Method:

In a pan add oil and jeera dry for 2mins then add onions. Once onions turn brown add your chopped Tomatoes with all the above ingredients.Mash the tomatoes with a spoon as it cooks over meduim heat +- 15mins.

Butternut 

  • 1/4 onion chopped 
  • Boiled butternut 
  • Cinnamon stick
  • Whole Dry red chillies
  • 1/4 tsp paprika 
  • 1 tsp Brown sugar 
  • 1/4 tsp lemon pepper 
  • Salt 


Method:

In a pot add oil Onions and red chillies . Braise for 2mins then add butternut. Once butternut is mushy add your remaining ingredients.


Braise over low heat till done

Aloo fry🥔

  • 1/2 onion finely chopped 
  • 3 potatoes sliced 
  • Jeera seeds
  • Mustard seeds
  • 1 whole dry red chilli
  • 1/4 tsp Tumeric 
  • 1 tsp cumin powder
  • Salt to taste 
  • Atchaar masala 


Method:

In a pan add oil with jeera and mustard seeds, add onions. Once onions turn brown add potatoes with spices. Braise for few mins without adding water then add 1/4 cup at first. Cook over meduim heat till soft. Keep adding water if needed. Once done sprinkle atchaar masala (methi masala) over.

Fried brinjol 

  • Sliced eggplant 
  • Flour
  • Salt
  • Paprika
  • 1 beaten egg


Method:

Flour, salt and paprika mix together in a bowl 

Dip egg plants in egg then flour.

Fry till crispy. Season with salt and paprika .I doubled fried to make it extra crispy.

Brinjol curry

  • Cut brinjol
  • Jeera seeds
  • 1/2 onion chopped
  • Curry leaves 
  • 1 tsp ginger and garlic 
  • +-1 tomato chopped 
  • 1 tsp kashmiri masala
  • 1 tsp dhania and jeera
  • 1 tsp jeera powder
  • 1/4 tsp Tumeric 
  • Salt to taste 


Method:

In a pot add oil and jeera seeds. Braise for 2mins then add onions and curry leaves. Once onions are brown add ginger and garlic. Braise for a further 2mins, add tomatoes with all the spices. Braise till tomatoes are mushy. Add brinjol and cook for 10mins. Add 1/4 cup water and allow to cook over meduim heat.
