Ingredients:
- 1 large Chicken Breast or two small chicken breast
- 1 tablespoon of cornflour
- Grated thumb sized ginger
- 2 cloves Chopped garlic
- Tinned Pineapple
- Red Pepper
- Cashew nuts
- Coriander to serve

For the Pineapple Sauce:
- 100ml Pineapple juice
- 1 tablespoon brown Sugar
- 4 tablespoons Rice Vinegar or White Wine Vinegar
- 4 Tablespoons Soy Sauce
- 1 teaspoon Ginger
- 1 teaspoon fresh grated garlic or Garlic Powder
- 1 teaspoon of Chinese 5 spice
- 2 Tablespoon Cornflour

Method:
- To make pineapple sauce: In a bowl, add pineapple juice, 100ml of water sugar, rice wine vinegar, soy sauce, ginger, garlic, Chinese 5 spice, cornflour and mix together and put to one side.
- In another bowl thinly cut chicken season with salt and pepper and add 1 Tablespoon of cornflour plus a thumb sized piece of grated ginger and 2 grated garlic cloves.
- Heat a pan and cook the chicken and red pepper together and then remove from pan and leave to one side.
- For the sauce get pan hot again and pour the sauce mix in, add 2 cut up rings of pineapple, spring onions and cashews and stir sauce until it starts to thicken. Then add the chicken back in and coat all. Serve with fresh coriander xx
