INGREDIENTS

Marinade:

  • 2 tbsp Ras El Hanout Spice
  • 2 tbsp Honey 
  • 3 tbsp lemon juice
  • 4 tbsp red wine vinegar
  • 4 tablespoons olive oil
  • 2 tbsp fresh mint, finely chopped

For the Lamb:

  • Season lamb generously with salt and pepper
  • 1 large red onion
  • 4 cloves of garlic
  • 250ml beef stock
  • 2 generous handfuls finely chopped parsley 
  • 100g pistachios 
  • 100g pomegranate seeds

METHOD

1. Preheat oven to 150 degrees 


2. Mix all the marinade list together and lightly make cuts into the lamb and pour half the marinade over it, leave the other half to serve.


3. Cut up onion and garlic and put in base of oven dish and then place lamb on top and add stock then cover with foil or a lid.


4. Using your Meater+ meat thermometer place it in the thickest part of the lamb and start up the app and follow instructions


5. Leave in oven until the app indicates which is about 4 hours.. but the App will tell you precisely when it’s ready.


6. Shred and Serve with crushed pistachios and pomegranate seeds and the remaining marinade
