- Preheat oven on 70 degrees celcius to get warm not hot. Switch off oven when you start kneading. Spray cooking spray in a large bowl. Set aside.
- Keep 1/4 cup flour aside for kneading dough. Do not add more than this amount for kneading.

Ingredient:
4 and half cups flour, sifted
1 tsp fine salt
4 Tblspns milk powder
1/3 cup (80mls) sugar
1 Tblspn instant yeast
Whisk the above dry ingredients in a large bowl.

In a seperate bowl whisk the following:
- 1/3 cup lukewarm water
- 1 and 1/3 cup lukewarm milk
- 7 Tblspns of melted butter (about 100g)
- 1 large egg at room temperature
- Add it to the dry ingredients and start to knead.

Method:
- Switch off your oven now. Add in the 1/4 cup of flour for kneading and knead by hand for 15 minutes. Dough will be sticky and wet at first but after 5 to 7 minutes it will start to get more tacky. By the end of kneading time dough will be soft and smooth and no longer stick to your fingers.
- Place in greased bowl. Spray cooking spray on top of dough, cover with cling wrap and leave in your warm oven to rise for 1 and half hours.
- Punch down, break off small pieces of dough, roll it out in to a log, fold in half and twist to make a plait shape making sure to pinch and seal the bottom well. Place on greased trays, cover with a tea towel and allow to rise for 10 minutes. Meanwhile heat up oil on medium heat in a deep fryer and fry your koeksister twists for 2 minutes per side. Place on newspaper to drain out excess oil. Once cooled dip in hot syrup and roll in dessicated coconut. Store in an airtight container.

Simple syrup
- 2 cups brown sugar
- 4 cups water
- 6 tsp lemon juice
- Boil above together, keep on low heat and dip koeksisters in. One minute per side.
- Add a little water to syrup each time when placing in a new batch of koeksisters.
- Roll in dessicated coconut.
- Enjoy.
