Homemade Mutton Dum Biryani

Ingredients:

For the mutton:

  • 1 kg mutton pieces clean and wash well
  • 5-6 tbsp oil
  • 2-3 large cinnamon sticks
  • 3-4cloves
  • 2 cardamom pods 
  • 1 teaspoon cumin seeds 
  • 2-3 bay leaves 
  • 2 tbsp ginger garlic paste
  • 2-3  Tblsp of Shan biryani mutton spice 
  • ½ tsp turmeric powder
  • 1 tsp red chillie powder 
  • 1 tsp ground cumin 
  • 1 tsp ground coriander 
  • Salt according to taste 
  • 1 cup yogurt
  • Handful of Fresh chopped Coriander 
  • Handful of red onions 
  • 3 tbsp mint leaves
  • 1 large onion & 3 tomatoes blend well

Method:

  • 1 cup masoor  I soak masoor overnight and boil next day with 1/4 tsp turmeric and 1 tsp salt (don’t over boil)


  • In a pressure cooker add mutton pieces ,yogurt,fried onions ,mint leaves, coriander leaves, ginger garlic ,fried onions then add rest of the spices and marinate it well.


  • Then add tomato and onion mix and oil and cook for 5-10 minutes on medium to low flame until the mutton changes its color then add two cups of water  and pressure cook for 3-4 whistles

Ingredients:

For the Rice

4 cups of basmati rice 

water for boiling

1 cinnamon stick

2 cardamom pods 

2 cloves

2 bay leaves 

1 tsp cumin seeds 

salt - to taste

2 tbsp oil

  • Soak rice in lukewarm water for 15-20 minutes 


  • In a pot boil water add salt ,cinnamon stick cardamom ,cloves bay leaves,cumin seeds and oil allow the water to boil for 5-10 minutes 


  • Rinse the rice and add It the boiling water
  • Cook the rice on high flame for 10-12 minutes 
  • Once done strain the rice

To assemble 

  • In a pot add a layer of half  the Rice 
  • then add the mutton gravy top with boiled masoor/lentils, fried onions and freshly chopped coriander and mint 


  • Then add another layer of rice and sprinkle with a little bit of red food coloring and fried onions 


  • and add in one cup of water 
  • Cover the pot with aluminum foil
  • Steam the biryani on medium to low flame for 30-35 minutes 
  • Serve with raita
