Ingredients
- 2 (500g) chicken breasts
- 1 egg beaten
- all-purpose flour as required
- oil for deep frying

Chicken marination
- 1 tsp salt
- 1/2 tsp crushed black pepper
- 1/2 tsp cayenne
- 1/2 tsp paprika powder
- 1 tsp garlic powder
- 1 tblsp worscestershire sauce

Mushroom sauce
- 150 g mushrooms sliced
- 2 tbsp butter
- 1 tblsp olive oil
- 5-6 garlic cloves
- 1/2 medium onion diced
- Salt to taste
- 1/2 tsp crushed black pepper
- 1/2 tsp chicken spice
- 1/2 cup milk
- 1/3 cup fresh cream
- 1 tblsp dry parsley

Method:
- Slice the chicken from the middle so you will have four cutlets of chicken
- Put the chicken cutlets in between cling wrap and pound them until 1 cm thick
- Marinade the chicken with the above ingredients and set aside for 30-35 minutes
- In three separate plates add whisk egg add some flour and breadcrumbs
- Firstly coat chicken in flour coat both sides and shake off the excess flour then dip in egg and coat in breadcrumbs Deep fry until golden.
- Mushroom sauce
- Heat butter and olive oil add in the minced garlic
- And diced onions and sauté for 10-15 minutes until mushrooms develop flavour add the milk,season with milk pepper chicken spice and parsley simmer for 10 minutes add cream and mix well
- Serve chicken schnitzel with potatoe wedges lemon wedges and mushroom sauce enjoy.
