Veggie Chicken Stir Fry

Today I want to share with you this delicious and simply recipe. If you don't eat meat, leave it out. Perfect low carb delicious dinner.

Ingredients:

- 600g of chicken breast cut into 2 bites

- 3 medium carrots sliced in rings

- 1 red paprika finely sliced

- 1 yellow onion cut into half rings

- 1 zucchini sliced into half rings

- 3 cloves of garlic pressed garlic

- 1 tbsp of minced ginger

- 3 tbsp of oil

- 40g of cashews

Sauce:

- 250 ml of chicken broth

- 100 ml of soy sauce

- 2 tbsp of honey

- 1 tbsp of flour for thickening the sauce

Preparation:

  1. Fry the chicken with 1 tbsp of oil in a pan. Remove the chicken and cover to keep warm.


  1. Add the 2 tbsp of oil in the same pan, sauté the onions, then add the carrots, paprika, zucchini, broccoli. Cook 2 minutes before adding each ingredient.


  1. Cook all the vegetables together for 5 minutes and return the chicken into the pan, add the ginger, pressed garlic and cashews. Mix well.


  1. Combine together chicken broth, soy sauce, honey. Mix 1 tbsp of flour with 3 tbsp of cold water, then add the combined sauce (1 tbsp at a time) to the flour by mixing all the time until well combined.


  1. Add the sauce to veggies and chicken bring to boil and reduce the liquide about 3 minutes.


  1. Season with sesame seeds. You can serve with rice or rice noodles, but I prefer just the stir. Have a nice Monday evening!
