Ingredients:
- 1 tbsp olive oil
- 1 lb chicken breast
- 1/4 tsp salt/pepper
- 1/4 tsp garlic powder
- 3-4 cups kale
- 1 sweet potato (diced and chopped)
- 1/4 tsp garlic powder
- 1/4 tsp paprika
- 1/2 tbsp olive oil
- 1 cup brussel sprouts (diced and chopped)
- 1/2 tbsp olive oil
- 1/4 tsp salt and pepper
- 1/4 tsp garlic powder
- 1 cup wild rice cooked
- 1 apple chopped
- 4 oz goat cheese
- 1/2 cup pecans
- dressing:
- 1/2 cup balsamic vinegar
- 2 tbsp almond butter
- water to thin

Method:
- Preheat your air fryer to 360 degrees. Coat your chicken in olive oil, salt, pepper and garlic powder. Cook for 9 minutes, then flip and cook for another 9 minutes. Heat 2 cups of water until boiling, then add your rice. Simmer for about 17 minutes or until fully cooked.
- Begin to chop sweet potato, brussel sprouts, and apple. In two separate bowls add your veggies and seasonings accordingly. Adjust the air fryer temp to 400 degrees. If your air fryer is large enough, add both veggies and cook for about 10 mins. I had to do two separate batches!
- Start assembling your bowl by adding 3 cups or so of kale to the bottom, followed by chicken, rice, veggies, cheese, etc. Mix together your dressing in a small bowl and add water to thin.
