Roasted garlic broccoli:
tossed in olive oil, sea salt, pepper and garlic powder - roasted at 425F for 12 minutes!

ingredients:
- 12-14 meatballs
- 1 lb ground beef, turkey or chicken also work
- 1 egg
- 1 tablespoon fish sauce
- 2 teaspoons coconut aminos or low sodium soy sauce
- 1 tablespoon fresh lime juice
- 1/4 teaspoon sea salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground ginger
- 1/4 cup scallions, chopped
- 2 tablespoons cilantro, chopped

Sweet and sour sauce:
- 2 tbsp sesame oil
- 1/2 cup water
- 1/2 cup rice vinegar
- 1/3 cup brown sugar
- 5-6 garlic cloves minced
- 2 tbsp tamari or soy sauce
- 2 tbsp chili paste sambal oelek
- 1 tbsp cornstarch

Directions:
1. To make sweet and sour sauce, add all sauce ingredients into a small saucepan on low heat and whisk until combined. Don’t overcook, it should be thickened. Remove from heat.
2. Mix all beef ingredients in a large bowl. Form into meatballs.
3. Preheat pan with oil to medium heat. Add in meatballs and cook on all sides until done and browned.
4. Add on top of rice and with veggies! Drizzle sweet and sour sauce on top and serve!
