Cinnamon Roll Pancakes
Base
1 1/2 cups of your favorite pancake mix, plus whatever ingredients are needed according to package instructions

Cinnamon swirl
1/4 cup pancake mix
1 tbsp cinnamon
2 tbsp coconut sugar or brown sugar
Water

Cream cheese frosting
1/4 cup cream cheese (regular or vegan)
2 tbsp powdered sugar
2 tsp vanilla
Nut milk, as needed

Method:
- 1. In a mixing bowl, combine pancake mix ingredients. Whisk until smooth.
- 2. In a small bowl, combine cream cheese, powdered sugar and vanilla. Whisk until smooth. Add milk, if needed, to thin frosting.
- 3. In a second small bowl, combine cinnamon swirl ingredients. Add water, 1 tbsp at a time and mix until you have a thick batter. Pour into small piping bag or plastic bag and cut off one corner.
- 4. Heat a large frying pan over medium low heat. Spray pan with oil. Use 1/3 measuring cup to scoop base pancake batter and pour onto pan. Pipe the cinnamon sugar pancake mixture in a swirl pattern on top of pancake.
- 5. Allow pancake to cook a few minutes, then flip. Cook another 2 minutes but watch carefully, cinnamon sugar batter cooks faster than the regular pancake batter and can burn.
- 6. Repeat until all batter is used. Add pancakes to a plate and drizzle with cream cheese frosting.
