- If beef mince is always on your shopping list, but you want to make something a bit different - this is such a lovely mid-week dinner!
- You can get biryani spice mix from most supermarkets, either in packet form or in a spice jar - it's full of warming rather than hot flavours, so it's a good one for kids too.

Ingredients:
- Red onion, finely sliced
- Red pepper cut into small cubes
- Oil for frying
- 500g beef mince
- 2 cloves garlic finely chopped
- Heaped tbsp biryani spice mix
- 2 tbsp tomato puree
- 10 cherry tomatoes roughly chopped
- 250ml chicken stock
- 2 x 250g pouches microwave basmati rice
- 1 tsp turmeric
- 3 cardamom pods (optional)
- 50ml boiling water

Method:
- Place the red onion and pepper in a large non-stick frying pan with a drizzle of oil.
- Fry for 5 minutes on a medium heat, stirring reguarly.
- Add the beef mince, turn the heat up and fry for 5 minutes until browned all over.
- For the last minute stir in the garlic, biryani spice and tomato puree.
- Add the tomatoes and chicken stock.
- Bring to the boil and simmer on a medium to high heat for 3-5 minutes, half covered, until the sauce has thickened and the beef is cooked through. Season with salt and pepper.
- Whilst the beef is frying, tip the rice into a microwavable bowl. Use your hands to break the rice into individual grains.
- Stir in salt, pepper, turmeric, cardamom pods and 50ml boiling water.
- Cover the bowl in cling film and microwave for 4-5 minutes until cooked through
- Roughly mix the rice into the beef. Finish with a little yoghurt.
