Ingredients
4 chicken breasts approx 150g each
4 bacon medallions
140g eat lean grated and RED cheese (70g per healthyA)
½ onion diced
2 cloves garlic crushed
400g tinned chopped tomatoes
1 tbsp tomato puree
½ small lemon juiced
1 pot jdseasonings Cajun seasoning
1 tbsp balsamic vinegar
2 tbsp Worcestershire sauce
2 tbsp white wine vinegar
1 tsp granulated sweetener
Method
Take each chicken breast, wrap a bacon medallion around the middle and secure it with a cocktail stick
Set the chicken aside, then add all of the remaining ingredients (not cheese)into an oven-proof dish with a tight fitting lid
Place the chicken on top and replace the lid. Cook for 1 hour at 180°C
When the time is up check that the chicken is cooked. Remove it from the dish and set aside.
Blitz the sauce with a stick blender until smooth
Place the cooked chicken in an ovenproof dish and remove the cocktail sticks
Pour the sauce over the chicken breasts and top with cheese. Divide the cheese equally between all for chicken breasts
Place under a hot grill until the cheese is melted and a nice golden colour.
Served with sweetcorn, green beans, carrots and smashed roasties sprayed with frylight, seasoned with jd seasonings Perfect Roast Potatoes then in the oven for 25 mins.
