One Pan Spicy Tomato Caper Fish

Ingredients:

1 whole white fish ~1.5 to 2lbs 

2 small tomatoes, diced

1/2 red onion, minced

2 garlic, minced

2-3 chilis, chopped 

2-3 tbsp capers 

1/2 lemon, juiced

Handful of chopped cilantro

2 tbsp ghee

2 tbsp oil


Method:

1. Pat dry your fish and generously season with salt and pepper on both sides and inside the cavity.


2. Cut slits on each side if using a bigger / more plump fish for easier cooking. 

3. Melt ghee over medium heat and add in oil.


4. Pan fry fish for 3 to 4 minutes on 1 side until golden brown then flip.


5. Add in red onion, garlic, and chilis and fry until fragrant ~2 minutes.


6. Add in tomatoes and capers for another 2 to 3 minutes and gently season with salt & pepper.


7. Squeeze over lemon juice and add in wine for another 2 minutes then mix in chopped parsley and serve.


Notes:

For a larger fish you can add a bit of chicken stock so it creates a bit of steam and close the lid.
