INGREDIENTS
250 g (half a packet) pasta grande spaghetti, cooked
1 kg beef mince
2 tbsp cooking oil
salt & pepper, to taste
1 medium onion, grated
1 tbsp garlic, grated
¼ cup bread crumbs
2 tbsp finely chopped fresh coriander
1 egg, lightly beaten
2 cans canned tomato
METHOD
●Step 1
In a bowl, add half onion, half garlic, mince, breadcrumbs, 1 tbsp, 1 tbsp coriander, egg and salt & pepper. Gently mix meat mixture until well combined. Using wet hands, form into 12 meatballs.
●Step 2
Heat cooking oil in large sauté pan. Add meatballs; cook until well browned on all sides, about 10 minutes. Transfer meatballs to paper towel to drain.
●Step 3
In the same pan, add reserved vegetables, canned tomatoes, 2 cups water & coriander, sauté. Transfer meatballs to sauce; cover. Cook until sauce thickens and meatballs are cooked through, flipping meatballs every 5 minutes to coat in sauce, about 10 minutes more.
