Ingrédient:
*1 broccoli & stalks or Cauli
*1 onion, sliced or leek
*Handful tomatoes or mushrooms
*Handful grated cheese
*8 eggs
Salt & pepper
Optional - chopped salad leaves or herb stalks or leaves off celery.
Method
1. In an ovenproof pan, steam chopped broccoli florets & finely chopped stalk, lid on, w/ 3 or 4 big splashes of hot water & a pinch of salt for 3 mins until just tender.
2. Meanwhile preheat grill on high & whisk the eggs in a bowl with s&p, add grated cheese. Plus any extra herbs, leaves etc
3. Discard any excess water from the broccoli pan and then add a little butter or oil to the broccoli in the pan. Pour in the cheesy egg mix, stir and make sure evenly filling the pan, push in onion slices & halved cherry tomatoes then sprinkle some s&p on the tomatoes & let the bottom of the frittata cook on a medium high heat for about 5 mins then pop under grill for 3-5 mins until set, wobble the pan to check. Leave to rest for 5 mins then slice up & enjoy.
