Ingredient:
1 1/2 cups jasmine rice
500 ml chicken stock
2 teaspoons green masala
1 handful of ready fried onions
1/2 tin whole tomatoes blended
2 teaspoon tomato paste
500g prawns cleaned
8 muscles
Cup of calamari
1/2 cup of peas
1 lemon cut into wedges
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
3 tablespoons olive oil
1 teaspoon crushed garlic
1 teaspoon salt
Crushed black pepper
1 teaspoon garlic butter
Method:
1. In a flat pot or pan add in your oil. When oil is hot add in your onions,crushed garlic and green masala,mix for a few seconds.
Add in your spices mixing for a few more seconds.
2. Add n your tomatoes and tomatoe paste. Allow to cook down. Throw in your rice and coat all the rice with the tomato mixture.after a few minutes(10) add in your calamari allow to cook for a few minutes whilst mixing. Now add in your peas. If you feel your rice needs some extra liquid add in a little water.
3. Add in 400ml of stock. Cook on low with the lid on for a few minutes. Remove lid,mix through then place your prawns and muscles on top of rice with the balance of stock. Place small pieces of garlic butter on top of rice.Cook with lid on low.
5. When seafood has cooked through put heat off. Allow to stand for a few minutes so rice can further cook in own steam. Loosen rice gently with a spoon. Garnish with freshly chopped parsley and lemon wedges.
