Baklava rolls with very crispy texture


INGREDIENTS(For the syrup): 

1 cup sugar

1 cup water

Lemon rind of 1 lemon

1 tbsp lemon juice 

1 tbsp honey


Method

Combine all the ingredients in a pot. Place the pot over medium heat and simmer until the sugar melts. Stir,  remove from heat and set aside to cool. 


INGREDIENTS(For the rolls): 

Nuts: you can use any nuts you like and as many as you like. 

I'm using: 

100g pistachios 

100g almonds 

A tsp of cinammon (optional) 

200g melted butter

500g store-bought phyllo dough


Method:

Coarsely grind your nuts in a food processor and add any spices that you like. 


Take one sheet of phyllo and drizzle it with the melted butter. Place another sheet on top and drizzle with butter as well. Spread the nutty filling over the entire surface. Take 2 wooden skewers, place them at the edge of the phyllo dough sheets and start rolling up. Gently press the edges towards the center creating folds and remove the skewers. 

Generously coat a baking pan with butter. Place the baklava roll and continue the same process with the rest of the phyllo sheets untill your baking pan is full. 


Using a very sharp knife devide the pastry into 3 and pour the remaining melted butter all over the rolls. 

Bake in a pre-heated oven at 160°C for 60-70 minutes until the baklava emerges nicely browned. Remove from oven and immediately pour the cooled syrup over the hot baklava rolls. Let them soak up the syrup for an hour, sprinkle with ground pistachios and enjoy🙏🏻
