Ingredients
• 1 cup almond flour
• 3/4 cup brown rice flour
• 1 tsp baking powder
• Pinch of salt
• 2 - 3 tbsp maple syrup
• 1/4 cup coconut oil
• ½ tsp vanilla extract
• Dark chocolate chips
• Handful of walnuts
Method
1. Preheat the oven to 350°F.
2. Prep & line your baking sheet with parchment paper.
3. Use a large mixing bowl to sift and stir your dry ingredients. Then start adding the wet ingredients while you whisk it with a spatula.
4. Use your hands to form a semi-sticky, tacky dough.
5. Add some oil if your cookie dough is dry.
6. Roll it into a ball and divide it into smaller balls depending on your preferable size.
7. Assemble the cookie balls at a distance of 2” on a lined baking sheet.
8. Gently flatten them with the palm of your hands.
9. Sprinkle chopped walnuts and chocolate chips on the cookies.
10. Bake for 12-15 mins or until the edges turn golden brown.
11. Let the baked cookies cool on the baking tray for 5 mins.
12. Transfer onto a wire rack to let them cool completely.
