YIELD: 6 SERVINGS
A scramble is one of the easiest ways to prepare tofu. Take it a step further and add some veggies and seitan and you’ve got a major power breakfast.
INGREDIENTS:
1 tablespoon dairy-free butter
½ cup diced onion
8 ounces mushrooms, sliced 16 ounces extra-firm tofu, drained, pressed and crumbled
8 ounces Slow Cooker Maple Breakfast Links, sliced thick
1 15-ounce can black beans, drained and rinsed
2 tablespoons nutritional yeast
½ teaspoon chili powder
½ teaspoon paprika
½ teaspoon black salt
½ teaspoon turmeric
¼ teaspoon garlic powder
INSTRUCTIONS:
1. Heat the butter over medium-high heat in a large skillet. Add the onion, mushrooms, tofu, and seitan links. Sauté 15 minutes.
2. Add the black beans, nutritional yeast, and all the spices and seasonings. Heat through 5 minutes and serve.
