YIELD: 2 SERVINGS
Avocado toast meets the breakfast brunch. Toast topped with protein, fiber, and taste makes for a simple breakfast that’s good enough for a midmorning snack, too.
INGREDIENTS:
1 tablespoon dairy-free butter
4 ounces extra-firm tofu, drained and pressed (page 17)
¼ teaspoon black salt
¼ teaspoon onion powder Pinch of turmeric
1 avocado Pinch of ground black pepper
1 teaspoon lime juice
2 slices sprouted grain bread
INSTRUCTIONS:
1. Add the butter to a skillet and heat over medium-high heat. Crumble tofu into the skillet. Sprinkle with the salt, onion powder, and turmeric and sauté for about 4 minutes, making sure the tofu is crumbled small.
2. In a small bowl, mash the avocado with the pepper and lime juice.
3. Toast the bread. Spread half of the prepared avocado on each piece of toast. Top with half of the prepared tofu on each piece of toast. Slice the toasts in half at an angle.
